Cilantro Lime Rice

Are you in awe? I just put before you a giant bowl of white rice! Don't worry, while a vat of white rice would excite Mr. KMW, I wouldn't do that to you guys. This rice has some flavor! It was a perfect side to the carnitas I posted earlier this week, and would really work well with any Mexican dinner.

My sister in law's secret? When cooking the rice in the rice cooker, she uses some of the broth from cooking the carnitas. Genius, right?! Definitely a good way to add flavor.

After you cook it in the broth, you top it off with cilantro, lime and sugar...and there you go...an easy and delicious side dish for your carnitas!  

I don't know about you, but this is definitely going to inspire me to start trying some new things out with my rice cooker.

Below is the recipe, adjust measurements based on the number of people you are cooking and the amount of rice you are serving.

Ingredients
2 to 3 cups white rice
water (for rice cooker)
carnitas broth (for rice cooker), if you are not making the carnitas you could substitute chicken broth
1 cup chopped cilantro
juice of 1 to 2 limes
1 to 2 teaspoons sugar

Directions
Cook rice in rice cooker, substituting carnitas broth for half the water. After the rice is cooked, stir in chopped cilantro. In a small bowl mix together lime juice and sugar. Add lime and sugar combination to rice and stir together. 

Serve and Enjoy!
