Now isn't that a mouthful?! I'm talking about the recipe name, but the burger is too. While Mr. KMW was devouring this burger, I went the open faced route and we were both very happy campers.

September 10th was the fateful day, where I was drooling over Megan's Steakhouse Marinated Portobello Mushroom Burger AND Lauren's Onion Ring Topped BBQ Bacon Burger. How was I supposed to see their posts that morning and not go to work dreaming of burgers all day? My daydreaming led to these two burgers meeting on my dinner plate, and they were a match made in heaven.

I hope everyone had a great weekend!

We had a productive and busy weekend here. I finally unpacked our last moving box (yes, that's 3 months after moving in). It was full of my cookbooks and I found a shelf that works perfect for our space and we are officially box free!




We hit up the Chihuly Exhibit at the Seattle Center.

And took advantage of a beautiful Sunday to get a hike in at Rattlesnake Ridge. It had beautiful views from the top, and we're still getting used to all of the Evergreens around this part of the country!

A perfect way to end the weekend was firing up the grill and making some turkey burgers.

Buffalo Chicken Burgers

Buffalo Chicken Burgers


We LOVE all things buffalo in our house, and these buffalo chicken burgers surpassed all of our expectations. And no, it wasn't because we have low expectations. 

This is why...

Buffalo sauce was mixed into the chicken patties and then more was slathered on while grilling.  

Blue cheese crumbles were mixed into the patties, just look at it oozing out below.

and, I added shredded carrots into the patties, so that means I could tell myself they were healthy :)

The burgers were then topped with avocado and immediately devoured. These were seriously so good, if you are a fan of buffalo sauce or my Pulled Buffalo Chicken Sandwiches these are a must try!

Balsamic Four Onion and Portobello Mushroom Turkey Burgers


A couple of weekends ago, we were driving home from a friends wedding in Ithaca and we stopped at Caravia in Clarks Summit, PA. In addition to having once of the best chicken cutlet sandwiches I've ever had in my life, we picked up some delicious spreads, sauces, & jams. One thing I picked up was a jar of this Balsamic Four Onion spread and I decided to use it to make turkey burgers. When I told my husband I was making turkey burgers, you should have seen the skepticism on his face. What, burgers without beef? Let's just say he was pleasantly surprised and requested they become a part of our regular rotation. I have proof below, this is him devouring his second burger.

Southwest Chicken Burgers

I have the grinding attachment for my mixer, and I love it when I find the time to actually use it to grind up some meat.  I enjoy playing with combinations of different cuts and combinations. I also like knowing that it gives me control of the quality and cut going into my meatball or burger, rather than just buying a package of ground meat.  This is probably more so for beef than chicken like I ground (I want to say grinded, but Google  tells me it's not actually a real word) up this past weekend, but I had fun with it and made a juicy and delicious chicken burger that was well worth the grinding.


I ground up some chicken thighs and breasts for my burgers, to have a combination of light and dark meat, and added in some chipotle peppers and other spices to come up with my Southwest Chicken Burgers.  I served them with Healthy Crunchy Onion Rings from How Sweet It Is.  Keep reading for the burger recipe, which makes about 6-8 burgers depending on what size patties you prefer.
