This recipe, or a version of it, was the first meal I ever made for my now husband when we were dating. I rarely cooked back then, when I was sharing a closet sized kitchen with two other roommates. Us girls were busy frequenting happy hours and enjoying the post college NYC lifestyle, and that did not leave a lot of time for cooking.

Chicken Enchiladas with Creamy Pumpkin Sauce

 

I hope you aren't tired of pumpkin recipes yet, because this one's a keeper! 

I had a can of pumpkin that was begging to be used and I was also in the mood for enchiladas. I threw this together, not sure what to expect and it went well beyond my expectations. I love when that happens.

I used ground chicken, black beans and corn in the enchiladas, but it can easily be substituted with shredded chicken, ground beef, turkey or they can be filled up with roasted veggies. I topped the enchiladas with creamy pumpkin goodness and cheese, and garnished with avocados.

Aaron's Grilled Paella

A couple of weeks ago, my family got together in California to surprise my Mom for her birthday, it was the big 6-0 so we wanted to do something special! With all of us living in opposite corners of the US (Seattle, LA, Charlotte & NJ), my mom doesn't have her grandkids and kids all together very often. Needles to say, both my Mom and Dad were very surprised to see us all show up in California.

We had fun enjoying the sunny weather, getting in some family time,

Bruschetta Chicken

I have a healthy recipe here for you today...juicy grilled chicken breasts, topped with tomato, garlic and herbs.

To be honest, I generally find chicken thats not in the form of wings pretty boring, but this recipe did the trick. Nothing is worse than dry chicken, so I used tips from Kalyn on how to make juicy grilled chicken breasts...and it worked perfectly! Lot's of marination (did I make that word up?) went into making this chicken, I used a balsamic marinade for the chicken and marinated the tomato and herbs overnight...all of that marinating led to great flavors. Hot Pepper Wings with Cilantro Sour Cream

 

Tom Douglas is THE chef out here. He owns a ton of restaurantsand the ones I have tried have been fantastic. Can't wait to check more off my list! When I had these wings at his restaurant, Palace Kitchen, I immediately came home to see if they were in his cookbook that I have.

And we're in luck!

I'm a big fan of the grilling technique in this wing recipe, it was pretty hands off and they cook fairly quick. I'm definitely going to be trying to make the Asian Style Baked Wings on the grill next. I think it would be an easy method to use when entertaining and they turned out really juicy.

A few things were off in the execution of the wings...they may have been marinated after a night out at the bar and some reading comprehension issues may have been involved. Regardless, they were still declious and I'll definitely be making these again. I love wings. And the Cilantro Sour Cream
