I am hanging onto Summer with this one. The peaches have just been so darn good and I just can't seem to get enough of them. Although, maybe I'm just a sucker for fresh, juicy fruit...because I was singing the same song with Strawberries this year.

Then pressed between bread with salty pancetta and creamy brie...well, we have a winner here folks! 

Once the peaches run dry, I'll happily transition to fall with my Apple, Cheddar and Red Onion Panini. I'm starting to think I'll like anything that involves fruit on bread with cheese.

I know I said that my Strawberry & Avocado Salad with Salmon was Summer, but so is this one! Ripe peaches, tomatoes and corn off the cob...pretty much Summer if you ask me. I think I'll designate the Strawberry & Salmon salad as my main dish summer salad and this one as my side dish summer salad. Deal? Although technically you could throw some Salmon on this and it would make a darn good main dish salad too.

If you don't follow me on Facebook or Twitter, you may not know that we recently bought our first house! After moving to Seattle a little over a year ago, we can officially call Seattle home. We moved to Ballard and I am loving being in walking distance to the Sunday Farmer's Market in Ballard.

Strawberry Bruschetta

 

I  just can't get enough strawberries lately. The strawberries I'm finding at my market are bursting with flavor, and I find myself coming home with 1,2...or sometimes 3 pints each visit.

Today, I have for you, a super easy and delicious strawberry appetizer for your summer entertaining!

Needless to say, when I had a BBQ this weekend, strawberries were going to be on the menu. I already had a dessert plan so I decided to go with something a little more savory. I saw a handful of Strawberry Bruschetta recipes that call for goat or cream cheese, but I tried that, and I thought it took away from the rich strawberry flavor. And since I can't get enough strawberry in my life these days, I clearly did not want any cheese interfering with the flavor.

Reader Alert: This is the first time in my life I have ever opted out of eating or using cheese. I am a cheese addict.

Strawberry Green Tea Smoothie

 


Smoothie's are such a refreshing summer breakfast, drink or snack. Almost as refreshing as an ice cold beer on a nice summer day, and definitely healthier. Smoothies are a great way to use up fruit that is on the verge of going bad, which is exactly what I did here.  I'll be adding this strawberry green tea to my smoothie rotation, changing up the fruit depending on what I have on hand.  One of my other favorites is my peanut butter banana, yes it's as good as it sounds and I'll be posting about it here at some point.

I also completed the Philadelphia Triathlon, ate a Pat's Cheesesteak, and had a lot of fun with friends this weekend, which is my excuse for taking the easy way out and posting an easy baked sweet potato and smoothie recipe in a row.  Don't get me wrong they are both delicious, but I'll be honest, it's my filler for not cooking in the past 5 days.  Keep reading for the smoothie recipe, and keep in mind that you can substitute any fruit you have on hand for the strawberries and peach.
