The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.

This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.

If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.

Egg, Prosciutto & Tomato Muffins
Sriracha Meatballs

I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.

Slow Cooker Chipotle Chicken Tacos

Slow Cooker Chipotle Chicken Tacos

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

I'm always looking for new slow cooker recipes and receive a lot of feedback from readers that you're also looking for more. So I took this Chipotle Chicken Recipe from Homesick Texan and threw it into my slow cooker. Once again, it was great to come home to a delicious dinner.

Making the chipotle sauce means that this recipe takes a little more leg work than just dumping ingredients into your slow cooker, but it's well worth the effort.

Chicken Enchilada Casserole with Roasted Red Pepper Sauce

Red Pepper Enchilada Casserole

I was going to make enchiladas, but then decided to avoid the assembling of enchiladas and make an enchilada casserole. With the highlight being a roasted red pepper enchilada sauce. Another highlight being that I picked up a rotisserie chicken from the store to make this a quick and easy weeknight dinner. The last highlight being how amazing this was as leftovers for lunch.

Okay, probably enough highlights. But I will give you one more picture, just to get your drooling.

Chicken Enchiladas with Creamy Pumpkin Sauce

Chicken Enchiladas with Creamy Pumpkin Sauce

I hope you aren't tired of pumpkin recipes yet, because this one's a keeper!

I had a can of pumpkin that was begging to be used and I was also in the mood for enchiladas. I threw this together, not sure what to expect and it went well beyond my expectations. I love when that happens.

I used ground chicken, black beans and corn in the enchiladas, but it can easily be substituted with shredded chicken, ground beef, turkey or they can be filled up with roasted veggies. I topped the enchiladas with creamy pumpkin goodness and cheese, and garnished with avocados.

Cheesy Dorito Crunch Taco Salad

Cheesy Dorito Crunch Taco Salad

My coworkers get all of the credit for the inspiration of the Dorito crunch in this chicken salad. I'm now a couple of months into my new job, and I've never heard a group of people talk about the Taco Bell Dorito Taco so much, honestly...I'd never even heard of it before. It sounds like an excellent idea, but the consensus around my office is that it's definitely not worth driving 900 miles to eat this taco.

So I took this cheesy Dorito crunch inspiration and combined it with the Southwest Chicken Salad from Lauren's Latest (I told you I had my eye on that salad) and let the magic happen. Hey, when I

Deconstructed Sweet Potato, Black Bean & Spinach Enchilada

Sweet Potato, Black Bean & Spinach Enchilada Flatbread

Remember when I told you about my new obsession with lavash flatbread?

Well this was a pretty darn tasty result of that, especially if you are an enchilada fan like myself. And don't get confused with me getting all fancy and using the term deconstructed (don't you see that on the menu at all of the hip restaurants), this is super easy to make.

This recipe is a knock off of my Butternut Squash, Black Bean & Spinach Enchiladas that you all seemed to enjoy. I swapped out the butternut squash for sweet potatoes and I added some goat cheese gouda that I picked up at Trader Joe's - - if you haven't already, you HAVE
