As you can tell by the picture, these Sloppy Joe's are messy, but just grab yourself a napkin, they're supposed to be sloppy. They are totally worth the mess, they were extremely satisfying and also easy to make, perfect for a weeknight dinner.  I never liked sloppy joes as a child, and that can of Manwich always scared me as an adult, but thanks to this recipe Sloppy Joe's are now a part of my life. So give this homemade tex mex version a try.

I've been going wild with Avocado this past week, thanks to my shipment from California Avocados Direct! So this will just be one of several upcoming posts that involves this delicious fruit. Yes avocado is actually a fruit despite many of us thinking it's a vegetable, I just had to use Google to make sure I got that correct. Shrimp was on sale so I decided to go with some simple and light shrimp tacos and give them a little kick with hot sauce. Shrimp is great for a weeknight dinner because it cooks up so quick and it's packed full of protein. These tacos were extremely easy to make and had great flavors.

Quick & Easy Tortilla Soup

Looking for a quick and easy weeknight dinner that's super tasty? This will be perfect for you! I was tired after work and literally threw this together last minute for dinner last week, using ingredients I already had on hand. I really didn't expect it to turn out so good, because I had always made tortilla soup that take a little longer and little more love to make. This could be on your table in 20-30 minutes (sorry I didn't time it) and it's pretty hands off (I undecorated my Christmas tree while making it).  Also, I'm fully admitting there was a lack of measuring and paying attention with this recipe since I was taking my tree down, but the flavors will all blend together well despite how much of each you put in. Adjust ingredients according to your preferences and taste as you go!

Also, I highly recommended topping your tortilla soup with avocado. I was devastated when I peeled my avocado and realized the one I purchased at the store was rotten. So I just sulked for a bit and then enjoyed my soup.

Slow Cooker Mexican Chicken

I recently added a poll to my blog to see what type of recipes you guys are looking for and many of you have requested slow cooker recipes. So I'm really excited to share this easy Mexican Slow Cooker Chicken with you guys, it only has 5 ingredients!

My friend and co-worker, Holly, passed along this recipe and it's oh so good. Holly's a mom of 4, works and has a social life that puts mine to shame...the definition of a busy cook (and crazy woman). If you're looking for an easy and dependable weeknight recipe this one is for you. Not only is the recipe delicious, but it uses minimal ingredients, is hands off and since I'm not feeding a family of 6 it will pretty much last us the whole week. It's also really good leftover and you can eat the chicken straight up, throw it in a tortilla shell, eat it over rice or make some nachos.
