Soy Balsamic Slow Cooker Chicken
The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.
Cedar Planked Salmon with Cayenne Lime Butter
This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.
Slow Cooker Chipotle Chicken Tacos
After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.
Avocado Chicken Salad Sandwich
If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.
Egg, Prosciutto & Tomato Muffins
I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.
I hope you all had a nice weekend. We had an action packed weekend of fun and sunshine here in Seattle. While Mr. KMW did some yard work, I worked on a DIY project for the nursery...trust me, it was an easy one, I am probably the least crafty person you know....I'll blog about it once it's finished.
We then had an epic dinner of at the Crawfish House, getting messy, while eating pounds and pounds of seafood.
And then burned off all (well some) of that butter bowling. Although, Mr. KMW was a little nervous they were going to think I was smuggling a ball out of the bowing alley.
You may look at this vat of Greek Orzo Salad and think that it is way too much food for two people. I did make a ton, but it was refreshing and flavorful so Mr. KMW and I were happy having it for dinner one night, and for lunch everyday during the week. I will be happy to make this again for dinner, make it ahead for a week of lunches or it will be great for BBQ's this summer.
As I mentioned a couple of weeks ago, I had a serious case of Spring fever and this was part of that. I went with my latest go to seasoning for the chicken, lemon and black pepper, and then let the flavors of the Greek ingredients take it home from there.
Did I mention it's super easy? All of this goodness for so little effort...that's my kind of cooking!
Now it's your turn, get a jump on Spring with this salad. I hope you all are having the nice weather we are enjoying in Seattle this weekend.
I just got back from a whirlwind trip to the East Coast, and it started a little something like this. I arrive at the airport last Tuesday night to take the redeye to Charlotte and the following conversation happens.
'Mam, the computer is not working and I cannot check in' - Me
'Hmm, that's odd, what is your name?' - Lady at the Airline Desk
I provide her my name, she can't find it.
'I have my confirmation number' - Me
I proceed to give her my confirmation number
'Your flight is on the 18th' - Lady at the Airline Desk
'Yes, the 18th, that's it, for some reason I can't pull it up' - Me
'The 18th is tomorrow' - Lady at the Airline Desk
I put my head down, walk away and Mr. KMW comes back to pick me up and I tried again the next night...thankfully with success the second time around.
After that little hiccup, I arrived in the Carolinas, met my new nephew and let my niece show off what a loving big sister she is,
had an early birthday dinner to celebrate my Dad's 60th (sorry no pictures),
and then headed up to NJ to surprise my best friend for her 30th birthday, whose due next month...doesn't she look fantastic?
We had a pretty relaxing weekend with good food, massages and bagels. I refuse to make a trip back to NJ without eating a bagel.
I arrived back to Seattle Sunday in time to pretend it is still summer, and make Grilled Salmon Panzanella.
I know I said that my Strawberry & Avocado Salad with Salmon was Summer, but so is this one! Ripe peaches, tomatoes and corn off the cob...pretty much Summer if you ask me. I think I'll designate the Strawberry & Salmon salad as my main dish summer salad and this one as my side dish summer salad. Deal? Although technically you could throw some Salmon on this and it would make a darn good main dish salad too.
