Creamy Hungarian Mushroom Soup

I'm generally not a New Years resolution type of person, but the past couple of years I've tried to set some goals for myself. This year I have a couple of food related goals.

The first one is to cook out of all of my cookbooks. I have a cookbook obsession, and where I love flipping through them, I'm not great at actually making meals with them. The second one is to do a little bit better job of meal planning now that I'm back at work, and have pretty much figured out the daycare drop off, go to work, daycare pick up, come home and wash and prep a million bottles routine (boy am I regretting Dr. Browns...SO MANY PARTS!). My main goal is to cook 2-3 dinners a week, that will last us most of the week, and make some lunches. My approach is to make a big pot of something on Sunday; Stew, Soup, Short Ribs, Ragu, etc., a slow cooker meal and one quick and easy weeknight dinner. Last weeks meal plan is below. I also made chicken salad for sandwiches during the week, lets just say when the Seahawks aren't on, I have a much more productive weekend.

Tuesday - Slow Cooker Salsa Chicken Tacos
Wednesday - Leftover Slow Cooker Salsa Chicken, this time in Taco/Burrito Bowl form 
Thursday - My Grandpa sent us an Omaha Steak Package for Christmas so we tapped into that
Friday - Dinner out on the town!

I don't have a goal to blog more, if it happens it happens and if it doesn't, it doesn't. I've always told myself that I would just blog how ever frequent or infrequent I want's for fun. Maybe I'll try to keep you up to date on my meal planning and share recipes I'm trying.

So this soup, it starts with creamy so it has to be good.

We like our brussels sprouts toasty #eatyourveggies

It's totally bizarre, but I have been craving brussels sprouts recently. Don't get me wrong, I crave my share of sweets (hello salted caramel gelato), but sprouts...can't get enough of them these days. 

Super simple brussels sprouts too, olive oil or butter, salt, pepper and sometime a little parmesan. These are so easy, it's almost embarrassing to be posting this recipe. Sometimes I pan roast them, sometimes I oven roast them and sometimes I grill them. If you can't tell by the photo, we like our sprouts extra toasty! I wasn't even going to post a recipe...hence the instagram picture...but that instagram picture got a decent amount of likes, so I figured you all like this veggie too.

I know I said that my Strawberry & Avocado Salad with Salmon was Summer, but so is this one! Ripe peaches, tomatoes and corn off the cob...pretty much Summer if you ask me. I think I'll designate the Strawberry & Salmon salad as my main dish summer salad and this one as my side dish summer salad. Deal? Although technically you could throw some Salmon on this and it would make a darn good main dish salad too.

This salad is summer. Crisp romaine lettuce, strawberries bursting with flavor, ripe avocado, blue cheese and broiled salmon make for one refreshing salad. It was absolutely perfect for a warm summer evening. Plus I felt super healthy eating this for dinner.

Corn Risotto bStuffed Poblano Peppers

The name says it all, these Corn Risotto Stuffed Poblano Peppers were freaking ridiculously good! Fresh summer corn on the cob is used for the creamy and delicious risotto and the flavors blend perfectly with the poblano pepper.

Mr. KMW and I could not get enough. It was one of those nights, we were really happy we hadn't invited friends over for dinner, this way we got to eat the second helpings ourselves. We swear we love our friends, its just that sometimes him being an only child comes out in the both of us.

I got the recipe from The Smitten Kitchen Cookbook. Remember when I had this on my Christmas list? Well my parents traipsed around the state of New Jersey to get me a signed copy!

And since I have been a longtime fan of Deb over at Smitten Kitchen I gave one to my sister-in-law for Christmas. Now our new favorite pastime when we get together is swapping stories about the mouth drooling recipes we've made out of this cookbook. This one has gotten so much use at our house, the pages are sticking together. No question in my mind you should go get yourself a copy of this cookbook!
