I'm soaking up all of the summer veggies while I can. Just like I'm soaking up the sunny weather we're having...the locals have put a FEAR into me of a rainy Seattle Fall, Winter & Spring. We ventured out kayaking on Lake Union yesterday and took our bikes out on the Burke Gilman Trail for a nice ride today and it was beautiful out. But the crisp, cooler air this evening is feeling like Fall. Say it ain't so! I'm hoping Seattle will have a few more nice Summer weekends to offer.

Sugar Snap Peas with Crushed Red Pepper

I had family visiting a couple of weeks ago and the plan was to make these Curried Mussels for dinner. If you like mussels, you have to try that recipe, it's amazing!

I was at a loss of what to make as a side dish...besides the obvious frites and a loaf of French bread to soak up the sauce. Those are both a must. I threw out the question of what vegetable to make as a side on Facebook, and Emily from Cozumel Chef was to the rescue! Her recommendation was a little butter or good olive oil, snap peas & crushed red pepper. It was super simple, quick and the perfect side. I added a little ginger and garlic. My only regret was only getting one pound of Snap Peas instead of two.

Sweet Potato Kale Bites

Sweet Potato & Kale Balls

Just try to get past that fancy nail polish of my new KMW hand model and check out these balls of sweet potato, kale & black beans!

If you're KMW follower you have probably realized that I love Sweet Potatoes. Definitely one of my favorite sides or vegetable to incorporate into a main dish...they're healthy and tasty!

When I saw these Sweet Potato Kale Bites up on Gina's Blog, I knew I wanted to give them a try. I'm still a newbie to this whole kale scene, but I love Sweet Potatoes & Black Beans so I figured I'd give these a go and I'm very happy I did. Definitely check out Gina's blog, I'm always impressed how she comes up with healthy recipes, that also seem very satisfying.

I brought these bites to the barbecue where I made this Serrano Spinach Macaroni & Cheese. They went over really well and were a great veggie option to bring.

Grilled Asparagus & Goat Cheese Polenta Cakes

I'M BACK!

Hopefully you guys didn't miss me too much and you were as entertained with Mr. KMW's post as I was. I had no idea that he had this up his sleeve, and when I happened to see it pop into my newsfeed I was happily surprised.

I was away on business last week, and spent my days at the LA Convention center in Video Game insanity at E3 (a video game conference).

After an exhausting week, I took the train out to the burbs where my brother and sister-in-law live and spent the weekend getting some fun in with my nephews. They're pretty awesome kids.
